Ube (pronounced "oo-beh") is a purple yam from the Philippines — not taro, and not beetroot. It tastes mellow and sweet, somewhere between vanilla and pistachio, and gives the latte its natural violet colour with no artificial dyes.
Whisk 10 g (about 2 tsp) into a splash of hot water until smooth, then add 200 ml steamed milk or a plant-based alternative. Pour over ice for an iced ube latte.
Blend 10 g ube powder, 40 g Fonte Vanilla Frappé, 100 ml milk and 150 g ice until smooth. Serve cold.
